does temp affect jetting or is it something to do with cooler air being more dense or something like that. :think:

All of the above. Cooler air is more dense, effectively making the mixture leaner because you have more air for the same volume of fuel. Same reason you typically need more choke to start when it's colder out.

Temperature, humidity, altitude all effect jetting.

And actually when it's cold, the fuel just doesn't want to vaporize so it doesn't burn, and you also get a bit leaner also.
